Orange, ginger and rooibos cordial

- Finely grate the ginger.
- Combine the honey, ginger, water and rooibos tea bags in a medium bowl and bring to a boil.
- Peel the orange and set the peel aside.
- Remove the pot from the heat and add the orange juice and peel. Stir well. Return the pot to the heat and bring to a simmer for 5 minutes.
- Remove from the heat and allow the mixture to cool completely. Then refrigerate until chilled.
- When ready to serve, strain through a fine mesh sieve. Divide the cordial between 4 glasses and top up with chilled sparkling water and serve with orange slices.
