Download PDFTo make the doughnuts, mix the flour, milk powder, yeast, cornstarch and salt together in the bowl of a stand mixer fitted with a dough hook.
In a blender, blitz the fresh, pitted dates, syrup and warm water and add to the dry ingredients. Mix together. Add more warm water if the dough looks too stiff – it should be soft and slightly sticky.
Cover and allow to rise in a warm place until doubled in size.
Knock the dough down and roll it out into a large rectangle.
Use a cookie cutter to cut out 8cm circles. Use the back of a wooden spoon to create a hole in the centre of each. Arrange on a floured baking tray, cover and allow to rise again until doubled in size.
Meanwhile, for the spiced date sugar, combine the 100g date sugar, 2 tsp SpinneysFOOD fine cinnamon, ½ tsp ground nutmeg and 1 tsp SpinneysFOOD fine ginger together.
Preheat the oil to 180°C and carefully add a few doughnuts into the oil. Fry until golden brown and crispy.
Drain on paper towels then immediately toss the doughnuts in the spiced sugar. Serve warm.
