Download PDFGrate the akkawi or mozzarella. Crumble the feta.
Lay out four slices of bread and spread butter over one side of each slice. Press the sesame seeds into the buttered sides of 4 slices of bread. Divide the grated cheese and feta evenly between them, spreading it out to cover the surface. Sprinkle the za’atar over the top layer of cheese and place the remaining four slices of bread on top to form sandwiches.
Heat a frying pan or griddle pan over a medium-low heat. Place the sandwiches in the pan and toast for approx. 2-3 minutes per side, pressing down lightly with a spatula, until golden brown and crispy.
Slice the toasties and serve warm.
