Download PDFCarefully remove the tofu from its packaging. Place the tofu on a clean, kitchen towel to absorb any excess moisture while you prepare the sauce.
Finely slice the whites of the spring onions and julienne the green part. Place the green parts of the spring onions in iced water. Mince the garlic. In a small pan placed over a medium heat, add the white parts of the spring onions, garlic, brown sugar, soy sauce, rice vinegar and chilli crisp. Stir frequently until the mixture starts to simmer. Allow to simmer for approx. 1-2 minutes until the sugar dissolves and the sauce thickens slightly. Remove from the heat and stir in the sesame oil.
Place the tofu on a plate and pour the chilli garlic sauce over the tofu.
Scatter over crispy fried onions, sesame seeds and spring onion greens and serve.
