Korean cheese fries

- Preheat the oven to 200°C, gas mark 6.
- Spread out the fries on a large baking tray and bake until slightly golden, approx. 20 minutes.
- Toss the fries, grate over the cheeses, sprinkle with the garlic salt and bake for a further 10-20 minutes.
- In the meantime, combine the mayonnaise, Sriracha and vinegar.
- Finely slice the spring onions and roughly chop a handful of coriander.
- Serve the fries with a drizzle of the spicy mayonnaise, spring onions, coriander and Togarashi (or red pepper flakes).
