Kookoo sabzi

- Preheat the oven at 180°C, gas mark 4.
- Finely chop the parsley, coriander, green onion, chives and dill.
- In a large mixing bowl, whisk the egg until well blended.
- Add the parsley, coriander, green onion, chives, dill, flour, barberries, roughly chopped walnuts, olive oil, salt and pepper to the mixing bowl. Mix all the ingredients until fully combined.
- Grease a mini-cupcake pan with butter.
- Pour the batter evenly into the pan – fill 2⁄3 of the way – and bake for 35-40 minutes.
- Remove from oven, allow to cool and serve.
