Kombu butter

- Rinse the kombu with cool water.
- Place in a pot over a high heat. Add the rest of the ingredients (except the butter) and fill with just enough water to cover the kombu. Bring the water to a boil and simmer until the kombu is soft, approx 5-10 minutes. Allow to cool. Strain the liquid.
- Transfer the soft kombu to a blender and add 4 tbsp of the reserved liquid. Blitz until it becomes a paste. Refrigerate until chilled.
- Work the unsalted butter with a spatula until soft then add 1-2 tbsp of the kombu paste. Serve the butter as a finishing touch to any seafood dish.
