  1. Lightly toast the almond flakes in a dry pan until golden brown. Slice the peaches into wedges.
  2. To assemble the parfaits, place ½ the yoghurt at the base of two glasses, then top with ½ the honey cake followed by the rest of the yoghurt. Top with the remaining honey cake, granola, peach wedges, almond flakes, burnt honey and bee pollen.
  3. Serve the parfaits immediately.
