Download PDFRinse the sardines, then pat dry with paper towels. Place them in a shallow dish. Zest and juice 2 lemons. Toss the fish with the olive oil, lemon zest, oregano leaves, salt and pepper until they are evenly coated. Marinate for approx. 10-15 minutes while you prepare the grill.
Preheat the grill to a medium-high heat. Brush the grill grates with 1 tablespoon of olive oil to prevent the fish from sticking.
Remove the sardines from the marinade and place them on the hot grill. Grill the sardines for 3-4 minutes on either side, or until the skin is crispy and the flesh is cooked through. Be careful when flipping to keep the fish intact. Transfer the grilled sardines to a serving platter.
Drizzle the fresh lemon juice over the fish and scatter over fresh oregano and basil leaves.
Serve the sardines with lemon halves on the side.
