Grilled fish skewers with olive, basil and caper salsa

  1. For the salsa, place all the ingredients in a small bowl, season and set aside to marinate.
  2. Preheat a griddle pan over a high heat.
  3. Chop the skinned fish into large 5cm cubes and thread onto 8 mini wooden skewers.
  4. Combine the olive oil, lemon juice and season well. Brush over the fish skewers.
  5. Place on the griddle pan and cook for 2 minutes each side or until charred and cooked through.
  6. Serve the skewers topped with the salsa.
