Grilled cabbage skewers

- Peel back any excess hard leaves from the cabbages.
- Using a sharp knife, slice both types of cabbage into 5cm-thick steaks. Lay them flat and cut into 5cm cubes.
- Thread the cabbage cubes onto the skewers. Colour block or mix between both types of cubes. Once all the cubes are bunched on the skewers, set aside.
- Dress the skewers with the olive oil and place on a preheated grill.
- Cook on each side for 4-5 minutes or until tender and charred.
- Remove from the heat, season and serve with the chilli, honey and vinegar butter sauce. Add salt and black peppercorn to taste.
