Grapefruit and thyme tonic

  1. In a pestle and mortar, crush the thyme and juniper berries.
  2. Add to a cocktail shaker with the grapefruit juice, honey and Borrago blend.
  3. Shake well to infuse
  4. Fill two glasses with ice and strain the drink over.
  5. Top up with the tonic water and garnish with the dried grapefruit slices to serve.
