Download PDFPreheat the oven to 160°C, gas mark 3. Line a baking sheet with baking paper.
In a large bowl, toss the mixed nuts with the egg white, maple syrup, garam masala, cinnamon and sea salt. Ensure the nuts are evenly coated. Spread the spiced nuts in a single layer on the baking sheet.
Roast in the oven for 12-15 minutes, stirring halfway through, until the nuts are golden brown and fragrant. Allow the spiced nuts to cool completely on the baking sheet. They will continue to crisp up as they cool.
Once cooled, transfer the spiced nuts to an airtight container. They can be stored for up to two weeks. Feel free to customise the spice levels according to your preference.
