Dragon fruit margaritas

- Peel and dice the dragon fruit. Zest and juice the limes.
- In a blender, combine the diced pink dragon fruit with 100g of ice cubes, the juice and zest of one lime and 2 tablespoons of agave syrup. Blend until smooth and well combined. Taste and adjust the sweetness, if needed. Repeat the same steps with the remaining dragon fruit to get two colours.
- Using a piece of aluminium foil placed at an angle in each glass, pour each colour on either side to create a half-and-half pattern to show both colours.
- Decorate each glass with a slice of dragon fruit. Serve immediately.
