Place the dragon fruit chunks, lime juice, agave syrup and coconut water in a blender. Blitz on high until smooth.
Add the ice cubes and mint to the blender and continue blending until the mixture is slushy and the ice cubes are fully crushed.
Pour the non-alcoholic daiquiri into glasses and serve immediately.
