Cucumber, lime and agave cordial with floral ice cubes

- To make the ice cubes, place the flowers in an ice cube tray and fill with 250ml still water. Freeze until solid
- To make the cucumber juice, blend one whole cucumbers and pass through a muslin cloth.
- Zest and juice the lime.
- To make the cordial, combine the agave, the rest of the still water, lime juice and zest and cucumber juice in a bowl. Pour into a resealable bottle. Refrigerate overnight.
- When ready to serve, place a cucumber ribbon in each glass. Pour the cordial into each glass. Dilute with the chilled sparkling water and top with the floral ice cubes.
