Coriander and bean salad

Salad 15 Mins Prep


  1. Heat 2 tbsp of olive oil in a saucepan and sauté the finely chopped onions, celery and the 3 crushed garlic cloves for 5 minutes over a low heat until softened.
  2. Stir in the spices and tomato purée with the cooked beans, cherry tomatoes, lemon zest and juice.
  3. Remove from the heat and stir in the herbs.
  4. Serve.
