Coffee ground brownies

- Preheat the oven to 180°C, gas mark 4.
- Grease and line a 20cm square baking tin.
- Core and dice the apples (such as Bramley).
- Combine the diced apples, coffee grounds and water in a small pot, place over a medium heat and cook for 5 minutes or until the apples are soft.
- Blend until smooth and creamy and return to the pot.
- Break the chocolate into pieces and add to the pot. Stir until it has melted.
- Add the rest of the ingredients, mixing until thoroughly combined.
- Pour into the lined baking tin, sprinkle with the salt flakes and bake for 25 minutes. Turn off the oven and leave inside for 5 minutes.
- Set aside to cool before serving.
- TOP TIP: This is best made with used coffee grounds from the same day; if you use a plunger and are worried the texture of the grounds is a little rough, place them into the blender with the cooked apples and blend until fine.
