Gently pour in the beetroot juice. Then slowly layer with the Sanpellegrino Aranciata Rossa. Finish by gently pouring in the non-alcoholic botanical gin. The drink should look like it is fading from deep red to clear.
Add a sprig of sage.
Serve with a stirrer or straw so guests can combine the ingredients before drinking it.
