In a bowl or jar, combine the olive oil, vinegar and seasoning.

Use this dressing as is, or customise it by adding one or more of the following ingredients based on your preferences:

Citrus zest or juice

A squeeze of lemon, lime, or orange for brightness

Herbs

Fresh or dried herbs such as oregano, thyme, or basil for added flavour

Honey or maple syrup

1-2 teaspoon for sweetness

Garlic

1 clove, crushed

Dijon mustard

1 teaspoon for a hint of tanginess and added emulsification

Shallots or onion

Finely diced for a mild onion flavour
