Download PDFTo make the dressing, combine the apple juice, olive oil, vinegar, a handful of mint leaves, salt and pepper in a bowl and set aside.
To prepare the salad, finely slice the celery stalks and roughly chop the leaves. Place in a large bowl along with another handful of mint leaves and watercress.
Drizzle over the dressing and toss to combine.
Serve immediately.
