Download PDFPrepare the oranges by cutting off each end. Stand each orange upright and using a small, serrated knife, pare away the peel and any white pith, following the curves of the fruit. Slice the fruit crosswise into 2cm-thick rounds.
Quarter four passion fruits.
Arrange the orange slices, passion fruit rounds and raspberries on a serving platter.
To make the dressing, scoop out the seeds of the remaining two passion fruits and combine with the rest of ingredients, except the mint.
Drizzle the dressing over the fruit. Serve the salad garnished with mint leaves.
