Chicken fajita lettuce wraps

- Finely dice the onion. Thinly slice the chicken breasts into strips. Deseed and slice the capsicums into strips.
- Heat the oil in a heavy-based saucepan. Add the onion and sauté for 2 minutes, then add the chicken strips, fajita seasoning and tomato paste. Add the chopped tomato and capsicum. Simmer on a medium heat for 10 minutes, or until the chicken is cooked through.
- Serve the chicken mixture in lettuce leaves, top with a dollop of yoghurt, fresh coriander and a lime wedge.
