Chicken club sandwich

- Place the beef bacon in a cold pan placed over a medium heat and cook until crisp. Remove from the heat.
- In a medium pot of boiling water, cook the eggs for 7 minutes then submerge in ice water. Once cool enough to handle, remove the shells from the eggs and slice.
- Slice the tomatoes and leftover chicken.
- To assemble, divide the mayonnaise and mustard between 2 slices of bread, top with gem lettuce, tomato slices seasoned with salt, sliced chicken, bacon and egg. Repeat with the remaining slices of bread.
- Serve immediately.
