Cardamom and cherry shrub

- Pit the cherries and remove the seeds from the cardamom pods.
- Place the cherries and cardamom seeds in a large jar.
- Add the sugar and mash in with the cherries using a muddler or wooden spoon.
- Combine the honey and vinegars in a large jar and add the cherries.
- Place in the fridge for 5-7 days. Shake the syrup before using.
- To make a cardamom and cherry shrub, mix 1 part syrup to 4 parts sparkling water and pour over ice. You may like more or less syrup, depending on your preferences.
- Serve with more ice and the fresh cherries.
