Brussels sprouts and apple slaw

  1. Juice the lemon. Peel and crush the garlic. To make the dressing, place the apple cider vinegar, maple syrup, miso paste, salt, pepper and olive oil in a jar or small bowl and shake or whisk to combine. Adjust the seasoning if necessary.
  2. To prepare the slaw, chop the ends off the Brussels sprouts and break up into individual leaves. Finely grate the apple into a bowl and cover with just enough water mixed with a splash of lemon juice to prevent it from browning.
  3. Once ready to serve, place the Brussels sprouts and drained grated apple in a bowl and toss with the dressing.
