Brussels sprouts and apple slaw

- Juice the lemon. Peel and crush the garlic. To make the dressing, place the apple cider vinegar, maple syrup, miso paste, salt, pepper and olive oil in a jar or small bowl and shake or whisk to combine. Adjust the seasoning if necessary.
- To prepare the slaw, chop the ends off the Brussels sprouts and break up into individual leaves. Finely grate the apple into a bowl and cover with just enough water mixed with a splash of lemon juice to prevent it from browning.
- Once ready to serve, place the Brussels sprouts and drained grated apple in a bowl and toss with the dressing.
