Blueberry, pear and lemon cordial

- To make the cordial, place the maple syrup and 125g blueberries in a small pot placed over medium heat. Mash the berries lightly. Once the mixture becomes thick and syrupy, remove from the heat and strain through a sieve.
- Zest and juice the lemons.
- Combine all the ingredients and pour into a resealable bottle, refrigerate overnight.
- When ready to serve, thinly slice a pear. Pour the cordial into 4 glasses and dilute with the chilled water. Garnish with the pear slices and the rest of the blueberries.
