Basic focaccia dough

  1. Stir the flour and salt together and set aside. In a large mixing bowl, whisk the yeast into the water. Wait 2 minutes and whisk again to dissolve. Add the oil.
  2. Stir half the flour into the liquid and then add the remaining flour.
  3. After all the flour is moistened, use a spatula to beat the dough vigorously for 15 seconds. Cover with cling film and allow to rise until doubled in size – approx. 1 hour.
  4. Use the dough with any of the following variations: spinach and feta focaccia, honey and thyme focaccia, and pepperoni focaccia.
