Download PDFPlace the honey in a saucepan over a medium heat and cook until it starts to darken.
Slowly pour in the thick cream and whisk to combine.
Cook for a further 3-4 minutes.
Remove from the heat and pour into an airtight container. Allow the mixture to cool in the fridge.
In a blender, blitz ½ cup of the burnt honey mixture, ice cream and milk until smooth, add the store-bought baklava pieces. Leave 6 extra for garnishing and give it a quick blitz, leaving some chunky pieces.
Pour the mixture into the 6 glasses, garnish with a drizzle of burnt honey and a piece of baklava.
