Download PDFFinely chop the onion and grate the carrot, celery, courgettes and sweet potatoes.
Heat the olive oil in a pan over a medium heat. Add the onion and sauté until soft and fragrant. Stir in the beef mince, breaking it up and cooking until browned. Add the grated vegetables, stirring until softened. Pour in the chopped tomatoes and tomato paste. Cook for 2 minutes before adding the lentils and water. Let the mixture simmer for 30 minutes until everything is cooked through and tender. Once the mixture is thick and the vegetables are soft, allow it to cool slightly.
Cook the pasta according to package instructions.
Serve the Bolognese with the alphabet pasta.
