Aubergine Reuben sandwich

- To make the dressing, combine the mayonnaise, ketchup, horseradish, Worchestershire sauce and vinegar in a bowl. Set aside.
- Drain the sauerkraut.
- Lay out the slices of rye bread. On four of the slices, spread a generous amount of the vegan Russian dressing. Top with the grilled aubergine slices followed by the vegan cheese and sauerkraut.
- Place the remaining slices of rye bread on top to close the sandwiches.
- Serve immediately.
