Download PDFPeel, core and chop the apples. Place the cubed apples, honey, fine cinnamon, fine ginger, salt and the freshly grated nutmeg in a pan over a low heat.
Cover and leave to cook for about 4-5 minutes until the apple begins to soften (add a splash of water if it looks dry).
Set aside ½ the apple mixture; lightly mash the rest in the pan using the back of a fork.
Add the porridge oats, milk, water and sultanas to the apples, and cook gently until the oats are soft – approx. 7-8 minutes.
Meanwhile, heat the ghee in a frying pan until bubbling. Add the nuts and seeds and toast for 2-3 minutes until golden. Remove from the heat immediately.
Divide the apple-oat mixture between 2 bowls; top with the remaining stewed apples and drizzle with the ghee-toasted nuts.
