Download PDFPlace the peels and cores, water and sugar in a medium-sized saucepan. Bring to a full boil, then reduce to a simmer for 20 minutes.
Turn off the heat, add the cinnamon stick and rooibos tea bags, and allow it to sit for 45 minutes to 1 hour.
Strain the tea and refrigerate until chilled.
Serve with ice and sliced apple, if desired.
