For a quick, simple and filling start to Easter brunch, French toast is hard to beat. Although the pan-fried breakfast speciality is normally made with bread soaked in milk and eggs, the vegan variations are equally as delicious. Here, oat milk, coconut oil and organic maple syrup are the choice substitutes.

This classic Italian egg and potato dish is similar to a crustless quiche and is a great way to use up your Easter leftovers. Meats, chopped veggies and cheese can be added to the base mix, which is then slowly cooked over a low heat for 15 minutes.

If you would like a change from the traditional egg-based Easter brunch staples of omelette, quiche and frittata, then why not try the deliciously creamy Turkish eggs? Known as Cilbir in Turkey, this rich breakfast dish comprises of two poached eggs placed over a Greek yoghurt and butter base, then drizzled with a spicy butter sauce.

Another adventurous take on the egg, milk and butter brunch dish is the Dutch baby pancake. Neither from Holland (they originated in Germany), nor classic pancakes, the Dutch baby is similar to a large Yorkshire pudding, or American popover. The main difference is that the Dutch baby is prepared as a breakfast, using cheese, chutney and fried eggs, whereas the puddings are often made with meat dripping.
