At Bordier, a wooden tool – also known as a malaxeur – is used to knead the butter and then the butter is pounded by hand. This process gives the butter flavour and improves its texture. This unsalted butter is ideal for baking.
Details
Sailor Jean-Yves Bordier arrived in St. Malo in the early 80s. There he perfected the art of kneading butter, using time-honoured techniques popular with 19th century butter makers. The artisan acquired La Maison du Beurre Creamery in 1985. Today, Bordier butter is ranked among the best.
