- To make the pudding, add the milk and rice to a deep saucepan. Bring to a boil, then simmer for 40 minutes, stirring continuously.
- Slice down the length of each vanilla bean and scrape out the seeds. Chop the white chocolate.
- Add the cardamom to the milk mixture. Stir in the white chocolate, sugar and vanilla seeds. Remove from the heat.
- Cover the saucepan with a lid and allow to cool overnight in a cool place or in the fridge.
- Place the whipping cream in a large bowl and whip until stiff peak stage. Fold into the mixture.
- Serve the pudding with the blackberries.
