Sweet potato fries

- Preheat the oven to 190°C, gas mark 5. Line a baking tray with parchment paper.
- Peel the potatoes and cut into 1¼cm-thick sticks. Place the sticks in a large bowl.
- Add the olive oil, whole garlic, fresh herbs, salt, and any other seasonings you’d prefer, to the bowl. Toss everything together so that each stick is coated.
- Place the sweet potato sticks on the baking tray, making sure they’re all placed in a single layer.
- Bake for approx. 20 minutes, then flip over and bake for a further 10 minutes until the fries are crispy and done to your liking.
