Sweet ‘n’ sticky BBQ chicken thighs

  1. Zest and juice the lemons.
  2. In a large bowl, combine chicken and lemon zest and juice, and toss to coat. Sprinkle over half the BBQ rub (reserve some for later) and toss again to evenly coat. Cover and let the chicken marinate in the refrigerator for at least 2 hours, or up to 12 hours.
  3. Preheat the oven to 190°C, gas mark 5. Line a baking sheet with baking paper.
  4. Place the marinated chicken on the baking sheet. Bake for approx. 30-35 minutes, basting every 5 minutes with the BBQ sauce, or until the internal temperature of the chicken reaches 74°C.
  5. Allow to rest for 10 minutes before serving.
