- Prepare the barbecue to a medium heat.
- Place the plank on the grid and char it on both sides for 1-2 minutes. Set aside to cool.
- Soak the wood chips in water for at least 30 minutes then drain.
- Place the camembert on top of the charred plank. Place the plank on the grill away from the heat.
- Scatter the chips over the heat, close the lid and allow to smoke for 6-10 minutes or until the cheese is soft and bulging.
- Serve the cheese on the plank with a drizzle of honey and crackers on the side.
