- To make the dressing, combine the olive oil, lime juice, peanut butter and vinegar in a small bowl. Season with the salt, pepper and chilli powder. Mix together well. Dilute with water, if necessary.
- To make the salad, finely chop the tomatoes, red onion, green onion stem and parsley. Place the tomato, onions and parsley in a medium bowl and pour the salad dressing over. Toss everything together. Adjust the seasoning if necessary.
- Serve immediately, or chill and serve later.
