Roasted tomato and zaatar manakish

  1. Preheat the oven to 200°C, gas mark 6. Place a pizza stone or baking sheet inside to preheat.
  2. Mix the dough ingredients together and knead for 8-10 minutes, or until smooth and elastic. Allow to rest for 10 minutes.
  3. Meanwhile, arrange the tomatoes on a baking tray, drizzle over 2 tablespoons of the olive oil, and season with salt and pepper. Roast for 10 minutes or until blistered but not yet soft. Set aside.
  4. Divide the dough into four equal portions and roll each out into a 25-30cm circle. Brush each dough round with the remaining olive oil and sprinkle over the za’atar. Place in the oven on the pizza stone for 10-15 minutes, or until golden and cooked through. Remove from the oven.
  5. Top the manakish with the labneh and roasted tomatoes and serve immediately.
