- Peel and slice the pineapples into 1cm thick rounds. Remove the core of each slice using a small round cutter.
- Add the remaining ingredients to a small saucepan and bring to a gentle boil. Lower the heat to a simmer for 5 minutes, stirring until the sugar has dissolved.
- Place the pineapple slices in sterilised jars and pour the pickling liquid over.
- Seal the jars and refrigerate overnight before consuming. Store for up to 2 weeks in the fridge.
