Masala spiced vegetable skewers

- Soak approx. 8-12 wooden skewers in water for at least 15-30 minutes.
- Prepare the vegetables for the skewers by chopping them either into rounds or 1.5cm squares. Skewer the vegetables by alternating between red onion, courgette and the different coloured capsicums.
- Brush skewers with a light layer of olive oil and sprinkle over half the masala spice mix.
- Preheat the grill to medium-high heat. 5 Once the grill is hot, place the skewers and grill for approx. 5-8 minutes per side, or until the vegetables are just softening and browning around the edges. Remove from heat and sprinkle with the remaining ready-made masala spice mix.
