  1. Preheat the oven at 180°C, gas mark 4.
  2. Finely chop the parsley, coriander, green onion, chives and dill.
  3. In a large mixing bowl, whisk the egg until well blended.
  4. Add the parsley, coriander, green onion, chives, dill, flour, barberries, roughly chopped walnuts, olive oil, salt and pepper to the mixing bowl. Mix all the ingredients until fully combined.
  5. Grease a mini-cupcake pan with butter.
  6. Pour the batter evenly into the pan – fill 2⁄3 of the way – and bake for 35-40 minutes.
  7. Remove from oven, allow to cool and serve.
