- Preheat the oven to 200°C, gas mark 6.
- Place the cauliflower in a large bowl with a tight-fitting lid.
- Fill the base 1cm deep with water then microwave the cauliflower on high for 10-12 minutes or until soft and tender.
- Drain the cauliflower and place in a roasting tray.
- Drizzle the cauliflower with the olive oil and season well with the za’atar and salt.
- Roast in the oven for 20-25 minutes or until golden.
- In the meantime, place the honey in a small saucepan and simmer until it starts to smoke slightly – approx. 5 minutes.
- Add the water and remove from the heat immediately.
- Remove the cauliflower from the oven and grate the halloumi over, drizzle with the honey and serve immediately.
