- Prepare a BBQ to a medium heat or preheat a grill pan over medium heat.
- To make the French toast, whisk the eggs, ½ tsp of salt and milk together in a shallow dish. Working in batches, add the slices of bread to the egg mixture and turn to coat. Lightly oil the BBQ grill with 1 tbsp of olive oil and place the bread over a moderately high heat until char lines form, approx. 2-3 minutes. Turn over and grill for another 2 minutes or until toasted and cooked through.
- Toss the tomatoes in 2 tbsp of olive oil and season well with the remaining salt and 1 tsp of dukkah.
- Place the tomatoes on the BBQ or grill pan and cook over a high heat until charred and blistered, approx. 15 minutes.
- Serve the French toast with the grilled tomatoes, ricotta and a sprinkle of dukkah.
