Grilled Thai lamb chops

- Juice 1 lime. Combine the onion, garlic, a handful of coriander, lemongrass, ginger, lime leaves, green chillies, fish sauce, sugar, sesame oil and 3 tsp of lime juice in a blender and blitz until smooth. Cover and refrigerate until required.
- Heat a griddle pan until smoking.
- Cook the lamb chops for 3 minutes per side or until cooked through. Transfer to a plate.
- Serve with fresh coriander and lime wedges.
