Citrus-infused grapes

- Wash the grapes and remove them from the stems. Place them in a large bowl.
- Using a peeler, make long strips of zest from the oranges and lemons. Juice the citrus fruit and set the juice aside.
- In a small saucepan, combine the orange and lemon peels with the olive oil and thyme. Cook over a medium heat until simmering, then turn off the heat and allow the oil to infuse for 10 minutes.
- Add the orange juice, lemon juice, vinegar, honey, salt and pepper to the grapes. Once the oil has cooled, pour it over the grapes and stir to combine. Cover the bowl with cling film and place it in the fridge to marinate for 2-4 hours.
- Serve the citrus-infused grapes as part of a cheeseboard – they offer a bright and zesty contrast to rich cheeses.
