- Prepare the oranges by cutting off each end. Stand each orange upright and using a small, serrated knife, pare away the peel and any white pith, following the curves of the fruit. Slice the fruit crosswise into 2cm-thick rounds.
- Quarter four passion fruits.
- Arrange the orange slices, passion fruit rounds and raspberries on a serving platter.
- To make the dressing, scoop out the seeds of the remaining two passion fruits and combine with the rest of ingredients, except the mint.
- Drizzle the dressing over the fruit. Serve the salad garnished with mint leaves.
