Caribbean banana fritters

- In a large mixing bowl, combine the mashed bananas, flour, sugar, baking powder, cinnamon, nutmeg and salt.
- In a separate bowl, beat the egg and milk together. Add the egg mixture to the banana mixture and stir until well combined.
- Heat approx. 1cm of vegetable oil in a large non-stick pan over a medium-high heat.
- Once the oil is hot, drop spoonfuls of the batter into the pan, making sure to leave enough space between each fritter. Fry the fritters for approx. 2-3 minutes on each side, or until golden brown and crispy. Place the fritters on a plate lined with paper towels. Repeat with the remaining batter.
- Serve the banana fritters warm, drizzled with the honey and topped with the macadamia nuts.
